Junmai brewing brings out the entire essence of rice to create the rich aroma and soft, crisp flavor of Junmai Daiginjo. Its ingredient, "Kikusui", was famous for its marvelous qualities as a Sakamai (rice for making sake), but was thought to have become extinct.
